Araj Pasta is semolina pasta made with stone ground durum wheat grown in Sardinia. Araj purpose is to make pasta using the best ingredients with old technique. After milling, the semolina flour is kneaded with cold water and drawn through bronze dies. The drying process takes about 36 hours at low temperature. Araj is located in Isili in the Sarcidano area, at the foot of majestic Seulo Barbagia. Araj name comes from the wind that blows in the area; the people say that “for making good pasta, good air is necessary”.
Natalis is shaped like a stout cylinder with raised edges to help hold sauce. This pasta is suitable for dishes with meat like ragu' or fish sauces. The large size of the pasta enhances the flavour of the grain.
