Pasteurised goats' milk caciotta aged in porter beer using selected raw ingredients and chocolate malt. It's a new collaboration between our producer and Seddaiu brewery based in Thiesi, North Sardinia.
The cheese is ivory white in color, compact and without holes, with thin, brown rind as a result of aging the cheese with beer and roasted malt.
The slow ageing process takes place at a low temperature to balance the flavour and emphasise the marriage between the goat cheese and craft beer. Aged for 20 days in chocolate malt and porter beer.
