Semi-cooked hard cheese, made with thermised goat’s milk. The wheel is made by the cheese being pressed into a "canestri" (wicker basket), and then treated on the rind with olive oil. This means the rind has its signature pattern and colour, and the cheese itself is a uniform white/ straw-like colour. The aroma is reminiscent of the herbs of the mediterranean, and the flavour is strong and pleasant with an aromatic finish.
Aged: 6 - 12 months.
