I Sas is made in a natural way, from local biodynamically-grown 100% Bovale grapes, all grown without the use of pesticides and vinified with biodynamic methods. Wild yeast fermented in stainless steel and aged for 6 months in concrete tank.
Tasting notes:
A juicy, plummy red wine with clove, ash and smoked-meat character. It's full and layered with lots of fruit and richness, round tannins and some walnut undertones.
Food pairing:
This wine is a perfect match with salted aged ricotta and Ovinforth blue cheese.
