Our Prosciutto Sardo comes from Marrubbiu, municipality in the Province of Oristano, in the Italian region Sardinia. It’s located in the northwest side of the island in the Campidano area.

The Sardinian ham is a high-quality and well-aged, cured ham obtained from 100% Italian pork leg and carefully deboned and massaged by hand with salt, aromas and spices and let it to rest. This phase is repeating several times, before ageing the ham for, at least, 8-12 months.  A traditional recipe with strong, salty, and aromatic mix herbs and green peppercorns used to seasoned the meat. 

The secrets lie in the traditional technique used for curing the meat and in the mixture of spices plus the air-drying process and all the aromas brought with the winds (mainly Mistral wind from NW) of the Monte Arci Mountain and the sea, surrounding the salumificio (salami factory).

The Sardinian ham has a traditional strong, salty, and aromatic flavours, due to the use of Sardinian spices which includes the green peppercorns that adds an extra layer to the flavour. Our ham has a great well balanced sweet and salty flavours that carries a beautiful richness and, as the pork melts on the palate, we are left with a wonderful creamy mouthful with gentle and well-balanced spices melding with mature pork notes.
