Is salted, pressed and air dried. It, alike to the mullet bottarga is considered to be the Mediterranean's version of caviar! The tuna bottarga has a more pronounced salinity, rich and defined taste of roe with a definite mineral edge. Tuna bottarga is stronger than mullet bottarga with a darker colour and more intense sea flavour
