Polpa di riccio is a highly unique product, this is in fact the sea urchin gonads, found inside the urchin. This organ stores nutrients, and contains milt and roe during the spawning season in spring. Dark yellow to burnt orange in colour with a smooth texture, the taste is sweet, delicate and musky. Sea urchin is ideal for starters, for dressing pasta with garlic, sea salt and fresh parsley or spread on a biscuit or a piece of toast to showcase the flavours without any distraction.
