Bosana olives are a staple of Sardinian cuisine. Preserved in brine, these olives are picked at the peak of the season giving them a medium fruitiness, spiciness and slight bitterness that makes them excellent for eating as a starter with some pecorino cheese, carasau bread and cured sausage. They can be also used for cooking.
