Our Sardinian terrine – also known as ‘Testa in Casetta’ is an 24-hour slow cooked pork terrine made using an ancient Sardinian recipe.
Often alternatively called ‘head cheese’, this type of terrine is made from the muscles from the head of a pig, seasoned with salt, pepper and cinnamon; however, our product has a particularly delicate texture compared to many others as it is produced without the most cartilaginous parts of the head like the ears and nose.
Traditionally, a wooden box lined with pork fat was used to pack the spiced cooked and chopped meat, where it would then set into the finished product. This is why it is called ‘Testa in Casetta’, literally ‘head in a box’.
Like any other terrine, it is incredibly versatile and requires no pre-cooking. It can be used in salads, as part of a platter or a starter for your meal, and pairs beautifully with bright flavours like citrus zest, fragrant herbs, our organic semi-mature pecorino Sardo, and our extra virgin olive oil ‘Giuseppe Fois Fruttato Medio’
