Lardo is a thick slab of pork back fat that has been aged for 50/60 days and seasoned with rosemary, thyme, nutmeg, cinnamon and black pepper.
Sliced thin, it can be eaten plain, with some olive or truffle oil over crusty bread or softened over a baked pizza or bruschetta. It's delicious for larding game and poultry, or draped over warm beans. It can be used in countless dishes in place of oil or butter.
All our meat products are gluten and lactose free.
