Lardo is a thick slab of pork back fat that has been aged for 50-60 days and seasoned with rosemary, thyme, nutmeg, cinnamon and black pepper.
Sliced thin, it can be eaten plain, with some olive or truffle oil over crusty bread, or softened over a baked pizza or bruschetta. It's delicious for larding game and poultry, or draped over warm beans. It can be used in countless dishes in place of oil or butter.
