Our ricottas are low fat cheeses made from ORGANIC sheep milk whey. This one comes from Pattada in North Sardinia and has been aged for 3-4 weeks then smoked for a few hours in oak.
It has a semi-soft texture with a lovely smokey flavour that enriches the milky taste of the ricotta. With ageing, this ricotta becomes firmer and has a stronger, more savoury flavour. It can be grated or used to flavour pasta and soups with vegetables, basil, guanciale or thick tomato sauce.
